Ticklemore goats cheese is handmade by Debbie Mumford & Mark Sharman, on the Sharpham Estate in Totnes, Devon. It has a subtle, fresh & mild taste and has a moist yet slightly crumbly texture which is perfect on it's own or delightful with fresh figs.
The goats' diets consist of not only fresh, lush grass - but also the hedgerows of Dartmoor, which results in a varied diet and some delicious tastes coming through in the cheese.
Each cheese is hand moulded and drained for 48 hours using a colander, hand salted and then place in the maturation room for 1 - 3 months where the cheeses then develop their natural white mould rind.
