Taleggio could possibly be the oldest cheese in the world. Its’ origins begin in the 9th century mountain valey of Val Taleggio, northern Lombardy. This washed rind cheese has a fairly strong aroma, yet a pretty mild & sweet taste, developing into a fruity tang.
As this cheese matures it develops an edible mould (or 'bloom'). This is a mark of quality and typical of this traditional cheese and each cheese stamped with the Taleggio trademark.
