This unusual & striking washed rind cheese is made by Pete Humphries at White Lake Cheese, which he set up in 2005.
His dairy is close to Glasonbury, where is 600 goats are producing a glorious array of award winning goats’ cheeses.
Rachel won the Super Gold at the World Cheese Awards in 2012.
Pete named the cheese “after a friend of mine - like the cheese she is sweet, curvy and slightly nutty!”.
Made from pasteurised goats milk and rind washed with brine, it has a smooth texture and a sweet nutty flavour without an overpowering 'goaty' flavour.
We recommend pairing this with a Sauvignon Blanc from the Marlborough region of New Zealand.
