Ossau Iraty AOC
This wonderfully smooth and creamy cheese comes from the Basque/Pyrenees region of France, where, in 1980, the cheese was given AOC status (the only other being Roquefort).
It is matured for a minimum of 3 months, with a recipe that has stayed the same for 150 years.
If you are looking for a great firm ,nutty & creamy cheese for the cheeseboard then this is a very strong contender.
