Made from his herd of Jersey cows, renowned cheddar maker, Jamie Montgomery created this semi soft, pliant, washed rind cheese after experimenting with some of his Jersey milk.
It is a beautifully rich raw milk cheese which is washed in a special brine every three days to create the slightly pungeant aroma and sticky rind. Its a fantastic cross between a Montgomery cheddar and a Tomme which works brilliantly when used in cooking (raclette) as well as on a cheese board.
