Manchego Miguel Diaz
This is a truly artisan Manchego which is aged for between 60 days and two years.
The dairy is a family business and the milk is collected from the dairy’s own herds and local farms.
Because of it’s limited production, the results flavours can be subtle and complex.
It has a compact paste, and is nutty with a savoury sweetness.
Full, fruity, buttery and clean.
More often than not, you wil be able to see the small air pockets in the cheese.
Try this with some floral honey dribbled over the top - this is a real treat!
This makes a fantastic cheese board option and is paired really well with a Spanish wine like a Tempranillo, with its lively red fruits and dryness.
