A wonderfully soft organic cows' milk cheese made by Julianna Sedli at The Old Cheese Room on the Neston Park Estate in Wiltshire.
It's features include intricate wrinkles on the outside & a delightful dusting of charcoal. The inside has a creamy texture as a result of the unmistakably rich Jersey milk, with a strong yet delicious flavour.
Lypiatt is matured for at least 2.5 weeks in order to allow the Geotricum to develop, resulting in it's lovely wrinkles.
