This beautifully presented goats’ cheese is made at the Highfields Farm Dairy on the Thorpe Estate in Staffordshire by the Bennett family. Their 350 herd of mixed goats are milked twice a day - producing around 3 litres of the good stuff each per day... what a team!
The Bosworth Ash is carefully handmade in buckets and is then individually shaped into their distinctive log. Finally they are coated in a vegetable salted ash, creating an beautiful mottled effect. The logs are matured for between 2-3 weeks and the flavour is a mouthwatering combination of earthy, bright & almost peppery hints.
We absolutely love gooey breakdown of this one. A dry white wine pairs really well with this fab cheese. Enjoy!
