This bright and zesty, traditional Welsh cheese is actually made in Somerset, where many farmers began making Caerphilly in the early 1800s, when demand exceeded supply in Wales. When some farmers turned away from making unpasteurised Caerphilly with a natural rind, Chris Duckett’s family continued to do so, until Chris became the last traditional producer of unpasteurised farmhouse Caerphilly in the country! Westcombe Dairy (where the famous cheddar is made) produces this wonderful Caerphilly, which has a delightful fresh and springy, with hints of raw mushroom and citrus. This is such a delicious cheese and it makes THE most amazing Welsh Rarebit!!!
