The Ticklemore Dairy, home to 3 cheeses which are made onsite by Ben Harris & Robin Congdon (Robin created the cheese back in the 1970’s and is rightly seen as a pioneer in cheesemaking- more so ,reviving the tradition of milking sheep in the UK).
Devon Blue is made to a Roquefort recipe and has a surprisingly creamy mellow taste for a blue, with a deep complexity of flavour.
It has subtle veining other blue cheeses and really packs a punch on aftertaste.
It is best enjoyed on the cheeseboard, accompanied with a spicy wine such as Cotes du Rhone, or on its own with a glass of cider.
