This is one of France’s oldest cheeses with AOP status & comes from the Normandy region, Pays de Bray, where, during the Hundred Years War (1337 – 1453), the French dairymaids of Neufchatel would make & mould the cheese into a heart shape to give as gifts to their English occupiers.
