It's made by Jonny Crickmore from the milk of his own herd of Montbeliarde cows in Suffolk. It’s silky smooth texture works fantastically alongside the earthy and mushroom charachteristics. The rind has a slight brownish marbling when ripe, which is a sign that inside the cheese will be lovely and gooey... absolute PERFECTION.
