This superb little goats cheese was on the brink on extinction until Monsieur Georgelet stepped in to save it. Being oval in shape and delicately wrapped in a 'feuille' (chestnut leaf), this is a beautiful cheese, not only aesthetically but of course for the taste buds! The leaf plays an integral part of the cheeses development. Firstly, 3-5 days after the cheese is made, the leaf is carefully applied. This not only retains the cheese's shape, but also takes moisture from the cheese as the leaf is dried. The leaf then gives moisture back to the cheese, as and when it is needed - clever stuff!
Pairing Mothias Sur Feuille with Champagne or a single malt whisky will ensure a match made in cheese heaven!
